What Is the Difference Between PCM and ACM Fry Oil Testing?
Fry oil degradation can be evaluated using different chemical indicators, most commonly Polar Contaminant Material (PCM) and Alkaline Contaminant Materials (ACM). While both relate to oil breakdown, they measure different stages and characteristics of deterioration.
PCM testing measures the accumulation of polar compounds that form as oil oxidizes and degrades through normal frying exposure to heat, oxygen, moisture, and food particles. As these compounds increase, overall oil quality declines. When PCM reaches a critical threshold, the oil has reached the end of its usable life. For this reason, PCM testing is widely used as a clear discard indicator and supports structured oil replacement programs and quality assurance documentation.
ACM testing measures reactive alkaline breakdown substances that develop during oil use. These compounds can influence foaming and oil behavior during active frying. While ACM provides insight into certain chemical changes occurring in the oil, it does not serve as a direct end-of-life indicator in the same way PCM testing does.
